Vineyard Information
The fruit is grown on a vineyard in Tumbarumba at nearly 700 meters above sea level on decomposed granite soils. The high altitude and cool climate make it perfect for growing Gamay.
Winemaking
Hand picked, 100% whole-bunch fermentation, some carbonic fermentation. Lightly plunged by hand 3 times daily. Pressed to amphoras to complete primary ferment. Matured in amphoras for 6 months and bottle unfined and unfiltered.
