Vineyard Information
The fruit is grown on a vineyard in Tumbarumba at nearly 700 meters above sea level on decomposed granite soils. The high altitude and cool climate make it perfect for growing Gamay.
Winemaking
De-stemmed but not crushed. Whole berries were gently fermented with hand plunging three times a day. The wine spent 2 weeks on skin post fermentation and then drained with a gentle pressing directly to our ceramic amphoras. The wine has been bottled without fining or filtration.
