Nick Spencer Wines is a small family-owned wine company nestled in the heart of New South Wales, Australia. Since our establishment in 2016, we've adopted a similar approach to the renowned Negociant model of France, carefully selecting fruit from top growers throughout New South Wales, including the esteemed regions of Gundagai, Tumbarumba, and Hilltops.

Led by the winemaker and founder, Nick Spencer, our dedication to excellence has garnered accolades rarely achieved in the industry, notably the prestigious Jimmy Watson Trophy & scholar of the Len Evans Tutorial. At Nick Spencer Wines, we craft wines that eloquently articulate the landscape from which they originate.

TWO DISTINCT RANGES - ONE SIMPLE PHILOSOPHY

Our approach to winemaking is very simple, to craft uncomplicated wines of purity. To do so we ultimately seek balance in our wines and utilise winemaking techniques or lack thereof that emphasise purity and expresion of fruit. We think in pursuing this philospohy, the fundamental objectives of crafting wines that reflect the environment they are grown in will take care of it self.

NICK SPENCER WINES

Drawing on inspiration from our rich Australian winemaking history, Nick Spencer Wines started with two red blends, a Light Dry red paying homage to the Australian 'Red Burgundies' and a Medium Dry Red paying honouring the Australian "Clarets". These two wines were the genesis of the brand and remain our two most important wines.  Blending red varietals is a craft that seeks to balance complexity and harmony, enhancing each grape's unique characteristics to create a wine greater than the sum of its parts. We should be focussing more on the style of a wine, its structure, balance and where it from etc rather than what variety is! In 2023 a second range of wines, P.A.R,  was launched.  P.A.R focuses its attention on alternative varietals and ancient winemaking techniques.

The Australian wine industry is currently undergoing an exciting recalibration driven by climate change, changes in consumer preferences and a continuing yearning by winemak- ers to explore and innovate.

Par wines prophets a landscape transitioning away from traditional grape varieties and wine styles of previous generations into an exciting tapestry of vineyards growing varieties that are better suited to climate sustainability and winemakers crafting wines better suited to our evolving lifestyle and cuisine.

P.A.R refers to a latin saying, examine the past, be in the present and look to the future. A motto that inspires and guides what we do at P.A.R wines
