 2023 Medium Dry Red, Gundagai, NSW 

Inspired by the Australian ‘Clarets’ of the 50’s 60’s and 70’s. The Medium Red Blend pays homage to the Classic Australian Red Blend, Shiraz and Cabernet. 

Tasting Notes

Remarkable lifted floral nose with iron filings, blue and black fruits aniseed and chocolate. The palate has a lovely crunch of acidity with an almost cranberry like character.

Food & Serving Suggestions

Roast vegetables and red meat are the two obvious pairings for this wine.

"Medium Dry Red. Cabernet 70%, Shiraz 20%, Malbec 10%. Cabernet and Malbec off the Moppitty Vineyard in Hilltops, Shiraz form Tumblong vineyard in Gundagai. Nick Spencer: “Since releasing the first MDR in 2017 the blend has gradually become a more Cabernet-based blend compared with the 2017 which was very Shiraz dominant. The quality of cabernet out of the Hilltops is extraordinary in my opinion.” All separate components of wine matured in a combination of old puncheons, amphora and stainless steel.
Australian wine can be a brash place, but it still manages to provide harbour to some considered, thoughtful souls, of which Nick Spencer is one. He is the real deal, in short. His wines are more than wines. They are their grapes laid bare.

This is such a pure expression of cabernet. It has depth, flavour, scaffolding and length, but most especially, it’s lifted. It tastes of boysenberry, cocoa, bay leaves and fennel, with complex tannin spreading and running through the juiciness of the finish. Drinking this is like watching steam rise from a cool dark pond; here though the steam is scent. It just keeps on rising as if it can barely stop itself. It’s a beautiful drink and a charming experience."
